Odors & Flavors
Odors and flavors are associated sensory responses created by a complex set of compounds. Generally, an assortment of these compounds are intended to be present in foods and consumer products. However, off-odors and unintended flavors that arise during manufacture, or sometime after, can create undesirable aesthetic or sensory issues. Microtrace has successfully identified off-odors and flavors and determined their potential causes. Reasons for off flavors have included flavor compounds used at the wrong concentration, counterfeit products using similar (but different) compounds, reaction products that have resulted from formulation changes or out of spec storage conditions, and decomposition and microbial growth.
